25 year old Cabernet vines - own rooted. Organic Principles (Not Certified) Clay Loam over fractured Mudstone. This Cabernet was treated quite delicately, receiving two punch downs a day to aid in gentle extraction of tannin, colour and flavour. This wine is classically made yet still holds a youthful edge thanks in part to the cool growing season. No fining
or filtration and all winery work was done by gravity. A Cabernet for the next generation of Cabernet enthusiasts.
