Touriga Nacional/Syrah - Organic (Certified)
Red Clay Loam and Rose Quartz - Classic Gold Diggings Terroir!
Touriga and Syrah picked the same day in late March, 2023.
This cofermentation underwent a wet carbonic method which enhanced the punchy floral accents of Touriga interwoven with layers of savory blue fruits thanks to the classic Pyrenees Syrah profile. Pressed off after a short 8 day maceration where it was then returned to tank where it rested on full solids. This cuvee is done in 100% stainless steel to help maintain high toned aromatics and pallet freshness. Two gentle gravity rackings with a small addition of So2 added post malo and one week before bottling.
