Syrah (100%) fermented with whole cluster. Two pump-overs a day kept the cap healthy and extracted tannin and flavour from the skins and stems. Fine bones tannin are a trademark here, married with pretty aromatics and pallet freshness. After 10 months in neutral French oak it was racked to tank for an additional settling before bottling.
