WINEMAKING NOTES
Grenache (90%), Syrah (10%). Hightoned red plum and rosewater aromatics captured a refreshing acid line. Gentle hand plunging preserved the whole cluster structure throughout fermentation which created the perfect environment for a successful carbonic layer which is present in this nouveau style wine. The tannin is crunchy and youthful.

Syrah (100%) picked quite early to obtain a high natural acid profile. Barrel fermented in large format Hungarian oak puncheon and left on full solid for 4 months in an oxidative environment which promoted the development of length and layers of complexity.

This cofermentation underwent a wet carbonic method which enhanced the punchy floral accents of Touriga interwoven with layers of savory blue fruits thanks to the classic Syrah profile of the Pyrenees. This cuvee is done in 100% stainless steel to help maintain high toned aromatics and palate freshness.

Cabernet (100%) vines, 25 years old. This cuvée was treated quite delicately, receiving two punch downs a day to aid in gentle extraction of tannin, colour and flavour. This wine is classically made yet still holds a youthful edge thanks in part to the cool growing season. No fining or filtration and all winery work was done by gravity.

Riesling (50%), Viognier (25%), Sauvignon Blanc (25%). A selection of aromatic and textural white varietals grown in Central Victoria's diverse viticultural regions including - Great Western, Pyrenees & Hanging Rock, Macedon. The varietals introduce their own unique lifted florals and textures thanks to differing pick times and the use of individual ferment techniques and vessels.

Sauvignon Blanc (100%) picked in early April off the famed Hanging Rock vineyard in Macedon Ranges. The site sits on loam over basalt and is directly south facing which allowed for maximum hang time and optimal ripeness. Barrel fermentation and full lees contact introduced a layer of generosity and mid palate weight that pairs beautifully with the naturally high acid line offered in such a cool region.

Syrah (100%) fermented with whole cluster. Two pump-overs a day kept the cap healthy and extracted tannin and flavour from the skins and stems. Fine bones tannin are a trademark here, married with pretty aromatics and pallet freshness. After 10 months in neutral French oak it was racked to tank for an additional settling before bottling.

WINEMAKING NOTES
Chardonnay (100%) planted 30 years ago on a remarkably steep north facing site on iron-rich volcanic red clay-loam soil. These thick skinned bunches were hand harvested and directly pressed to neutral French barriques where it received battonage during the end of fermentation to promote healthy yeast activity and texture. This north facing exposure lends serious richness in the cuvee which is balanced by generous natural acidity and preserved partial malo. 12 months in barrel before bottling.
